Fiesta Cobb Salad

Make this into a meal with whole wheat breadsticks and bananas combined with unsweetened frozen peaches. This salad servse 4 and contains 228 calories per serving! Very healthy!

Start to Finish: 15 minutes

5 cups torn romaine (about 7 1/2 ounces) or use the bagged romaine
1 cuo canned no-salt-added black beans, rinsed and drained
1/2 cup frozen whole-kernel corn, thawed (or can use 1 can of corn)
1 medium Italian plum (Roma) tomato, diced (I usually do two)
2 medium green onions, chopped
1 small avocado, chopped

Dressing:
3 tablespoons fat-free sour cream
3 tablespoons low-fat buttermilk
2 teaspoons cider vinegar
1 medium garlic clove, minced
1/2 teaspoon chili powder
1/4 teaspoon ground cumin

Also need:
Mexican cheese blend and baked tortilla chips to throw on top before eating.

In a large salad bowl, toss the salad ingredients.

In a small bowl, whisk together the dressing ingredients. Drizzle over the salad. Toss to combine. Sprinkle with the cheese blend and tortilla chips.
